The concept revolves around two “Fools”—the chef (Fool #2, typically Chef Erwin) and the host/sommelier (Fool #1, typically Roger)—who guide a small group of just 17 guests through a synchronized evening of fine dining and storytelling. The night begins promptly at 7:00 PM on the back patio with a champagne toast, where guests mingle before moving inside to sit around a U-shaped bar facing the open kitchen. The menu is a surprise 5.5-course tasting journey that changes frequently, prepared right in front of you with military precision and plenty of humor. It is an intimate, social affair where you are encouraged to chat with your neighbors and the chefs.
